Peking Duck - Chinese

For the famous Peking Duck dish from China, the ducks are bred especially for being killed, and are not supposed to be more than 70 days old, so that it will be in the height of its life and will add to the flavor and tenderness.

Also during the last 1/4 of their lives they're fed artificially to make it extra tender. The average male bird weights 3-4 kg. (7-9 pounds) and females 2-3 kg. (4.5 to 7 pounds)

Peking Duck was first exported to Britain and the United States in 1875 and to Japan in 1888. "Peking Tien Ya" or The "Peking Artificially Fed Duck" in Chinese.

Before putting the duck in the oven you have to get rid of all the feathers without breaking the skin, making this exceedingly difficult. So to get rid of its feathers, the duck is dipped in boiling water. And later it will be seasoned in sugared water.
