Matzo Ball Soup

Matzo ball soup is a soup enjoyed by Jewish families on various holidays, but specifically, Passover. The matzo balls are made from dough without yeast so it cannot rise. Though this is a Jewish passover soup, it can be enjoyed by anyone, anytime!

INGRIDIENTS;

For soup

1 chicken, cut up

2 chicken bouillon cubes

Bunch of carrots, cut up

Bunch of celery, cut up

For matzo balls

1 box of matzo ball mix, available at your local grocer

1 egg

water

Fill a very large pot 2/3 full with water. Add chicken and cook over medium flames for 15 minutes. Skim fat off the top and add all of the other ingredients. Turn flame down to a simmer and cover(venting slightly) and cook for 1 1/2 hours. Skim fat off top again before serving. The bouillon will give the soup an especially rich chicken flavor.

Follow the the instructions on the back of the box. Note that in addition to the egg and water, the recipe may call for other ingredients.

Add the matzo balls to the soup at the end of cooking, or add soup to matzo balls just prior to serving
